Chick'n & Waffles

Not mine, but you get the idea

I've seen it on TV, I've heard about it before, but never considered making it: Chick'n and Waffles! After I bought a bag of Lime Chipotle Strips from Gardein, and was craving waffles, I decided to put them together. I whipped up a batch of banana-moistened grids and George Forman'd my strips. After plating those together and drizzling a fresh key lime agave syrup on top; I was in heaven! The crispiness of the waffles and the slight hint of spice from the chicken sung together in harmony. Normally people have fried chicken and waffles, but this was close enough and 10X healthier. So the next time you are craving savory and sweet, reach for the waffle iron!



Banana-Moistened Waffles

Mix: 1 cup flour, 1 tsp Baking Powder, 1/4 tsp sea salt in bowl
Mix: 1 cup soy milk (any milk will work), 1 tsp vanilla, 1 tbsp maple syrup
Mash: 1 banana
Whip to soft peaks: 1 egg white

Mix dry ingredients in bowl. Form a well in center. Stir in wet ingredients until just mixed. Mash in banana so that most chunks are gone. Fold in egg white peaks. Cook for about 3-4 min on a 2-waffle iron, or 4-6 min on a 4-waffle iron.

Syrup
Juice two key limes, or one regular lime. Add 2-4 tbsp agave syrup and stir. Make sure seeds and pulp are not in syrup!

Gardein Chicken 
Cook according to directions, or just heat up for 7 minutes on a George Foreman grill.

Assembly and Eating
Place 1-2 chicken strips on plate. Stack pancakes and cover in Earth Balance and syrup. Take a peice of the chicken and waffle on the same fork and enjoy the great sensations in your mouth!
